A weight watchers muffin recipe with just 2 ingredients? Yes, you heard it right! Here is a super easy and delicious weight watchers pumpkin muffin with just 3 Smartpoints per piece. You need to get is freshly blended pumpkin puree and a fresh pack of spice cake mix.

I tried some more versions of it with butter cake mix and devil cake mix- both was extremely delicious! But my kids relished devil cake mix more. I made it with 8oz soy milk and 2 large eggs with one tablespoon of lemon juice and it made it so delicious and moist. So, here is the recipe you need to try.

Ingredients You Need:

  • 1 full box of spice cake mix
  • 1 full can or 15-ounce of fresh pumpkin puree

Tip: To give nutty cranky flavors add few chopped almonds, walnuts and pumpkin seeds.

Instructions – How to Make:

  1. Make a muffin mixture by adding pumpkin and spice cake mix all together
  2. Grease muffin trays with oil and sprinkle some flour
  3. Heap the muffin trays with mixture one by one.
  4. Preheat over for at least 10 to 15 minutes.
  5. Bake muffins at 350 degrees for at least 18 to 22 minutes until they get golden brown. Check the consistency by pricking it with knife. If knife comes out clean then muffins is ready to serve.

Make them in large batches and store in refrigerator to have them later!
