Vegetable Soup Recipe for Breakfast, Lunch and Dinner Soup

Ingredients required for making vegetable soup:

  • ¼ cups of olive oil
  • 1 diced yellow onion
  • 2 diced stalks of celery
  • 2 minced cloves of garlic
  • 2 small spoons of kosher salt
  • ½ small spoon of coarse ground black pepper
  • 1 large peeled and diced potato
  • 2 sliced carrots
  • 1 cup of corn
  • 1 cup of chopped green beans
  • 1 cup of peas
  • 2 diced vine tomatoes
  • 4 cups of chicken broth
  • 2 cups of V-8 juice

Instructions to be followed for making vegetable soup at home:

  1. Take a small saucepan and add 1 small spoon of butter into it and also put the diced onion and then saute it over medium heat for about 4 mins. Check the saucepan when the onion is translucent and barely browned and stir it intermittently.
  2. Now, add the garlic and keep cooking it for about 30 sec and keep stirring it constantly so that it does not burn.
  3. Then, add the mixture prepared in the saucepan into a large stockpot and also add all the other ingredients into the pot. Wait for it to start boiling and then reduce to a simmer for about 30 mins.
  4. Now, transfer the soup into the bowls and serve it with some garnish on the top.
