  • Olive oil – 2 tablespoons
  • Medium onion chopped – 1
  • Peeled and chopped carrots -2 large
  • Chopped celery – 3 stalks
  • Trimmed and cut -1 1/2 cups green beans
  • Dried parsley -1 1/2 teaspoon
  • Dried oregano -1 teaspoon
  • Dried basil -1/2 teaspoon
  • Garlic powder -1/2 teaspoon
  • Onion powder -1/2 teaspoon
  • Low sodium beef broth -6 cups
  • Tomato sauce -1 can (8 ounce)
  • Fire roasted tomatoes -1 can (14.5 ounce)
  • Fresh or frozen meatballs -1 1/4 lbs.
  • Mini Farfalle pasta – 3/4 cup


  • Switch on the flame and place heavy stockpot and add olive oil and heat it. Set the flame to medium flame.
  • Now add chopped carrots, onion, green beas and celery and stir.
  • Cook for around 7 minutes.
  • When veggies turns fragrant and slightly soft add oregano, parsley, garlic powder, basil and onion power and stir.
  • Cook for around 2 to 3 minutes. Do keep on stirring.
  • Add tomato sauce, beef broth, meat balls and fire roasted tomatoes.  Simmer the flame and let it cook for 7 to 10 minutes.
  • Add pasta, stir and cook for another 10 minutes.
  • After 10 minutes your tasty meatball soup is ready to serve and enjoy.


  • For this dish you can use frozen turkey or fresh beef, chicken meatballs or pork.
  • Try to use fresh veggies not the frozen one.
  • Fire roasted tomatoes are available in grocery stores.
  • If you storing the left over soup keep in freezer but not with pasta. Soup can be store with pasta in it.
  • You can use any type of pasta like ditalini, Mini Farfalle or acini de pepe.
  • If you want to add more flavors add parmesan cheese. Just grate and add.
