Lemon Cupcakes Recipe

Whether it’s my birthday or anniversary I love to have lemon desserts and lemon cupcakes are one of those desserts.

When my friends came for lunch I made these cupcakes and trust me all of my friends loved them. They asked me to teach them how to make these yummy and delicious cupcakes.

That time I decided to make my recipe ready for my readers too. The recipe is very simple and anybody can make it easily at home without any expertise in baking. So, here is the recipe.

Ingredients for the Lemon Cupcakes

  • All purpose flour – 1 1/4 cups
  • Baking powder – 3/4 tsp
  • Baking soda – 1/4 tsp
  • Salt -1/4 tsp
  • Unsalted butter – 1/4 cup
  • Vegetable oil -1/4 cup
  • Sugar -3/4 cups
  • Vanilla extracts – 1/4 tsp
  • Large eggs – 2
  • Milk – 6 tbsp
  • Fresh lemon juice -1/4 cup
  • Fresh lemon zest -1 tbsp

Ingredients for the Lemon Butter cream

  • Unsalted butter -1 cup
  • Powdered sugar – 4 cups
  • Vanilla extract -1/2 tsp
  • Lemon juice – 4–5 tbsp
  • Lemon zest -1 tsp
  • Salt to taste

Instructions

  • Take a bowl and add all-purpose flour, baking soda, baking powder, and salt and mix it.
  • Take a big bowl and add butter, powdered sugar, oil, and vanilla extract and beat till it becomes fluffy. It will take around 2 minutes. Beat with a blender to get a nice texture.
  • Add egg and blend with a blender. When the ingredients combine together add half of the flour mixture prepared earlier and mix.
  • Take a small bowl and add lemon juice and milk and slowly add to butter mixture with lemon zest.  Blend it again with a blender.
  • Add the remaining flour mixture and mix till it becomes smooth. Keep in mind don’t over mix the batter.
  • Set the cupcake liners on the baking sheet.
  • Fill the ¾ of the cupcake liners.
  • Place the baking sheet in the oven and bake for 15 to 18 minutes at 350°F (176°C) temperature.
  • After 15 minutes, check with a toothpick. Insert a toothpick in a cupcake. if it comes out clean that means cupcakes are nicely baked.
  • When cupcakes are baked, take them out of the oven and let them cool down.

For frosting, we will make buttercream.

  • Take a bowl and add butter and beat.
  • Now add half a portion of sugar and mix. When the mixture becomes smooth add 3 to 4 tablespoons of lemon juice and vanilla extract and mix.
  • Add salt and remaining sugar powder and combine well and blend till it becomes smooth.
  • Now add this frosting to the plastic bag and add icing on cupcakes.
  • Your tasty and yummy lemon cupcakes are ready.

Tips

You can store lemon cupcakes for 3 days but cover nicely and then store in the fridge. When you want to eat or serve, do at room temperature.
